松子魚片  

這是我們家常吃的一道菜,容易做又很營養。我喜歡買早已經過專業急速冷凍處理好的魚片放在家裡冰箱的冷凍庫,在不想出門買肉,就拿出來解凍做這道菜,魚肉正因為是冷凍保存,所以可以確保新鮮,沒有魚腥味。在魚市場陳列的魚都是經過解凍的,等你再運送回家,如果沒有馬上煮,常常就不新鮮了,所以才會容易有腥味。

This is a dish I prepare for my family very often. It is easy to make and good nutrition. I like to buy already frozen fillets (professional quick-frozen) keep in freezer all the time. It is better than already thawed fish fillets. Buy the frozen fish and thawed it yourself can ensure freshness and no fishy flavor. Fish on display at the fish market has been through thawing, by the time you transported home, if not immediately cook them, often not fresh, so will likely have smell.

 

材料:

 

  • 松子                      
  • 歐芹
  • 魚片
  • 太白粉
  • 鹽和白葫椒粉
  • 芝麻油

Ingredients:

  • Pine nuts, Toasted
  • Parsley, Finally chopped
  • Fish Fillet (any kind you like, prefer white with light flavor type)
  • Cornstarch or sweet potato starch
  • Salt and fresh ground white pepper
  • Sesame oil

 

做法:
  1. 歐芹是最後才撒在上面,所以一定要先將歐芹Parsley切碎備用,才開始切魚,要不然粘板又要再洗一次。
  2. 松子先用烤土司的模式,或350℉(170℃) 烤6分鐘。用炒鍋加油炒也可以。
  3. 魚片的水份擦乾,切片,均勻撒上鹽和白葫椒粉,均勻裹上太白粉。
  4. 煮一鍋熱水,水滾後加入鹽。投入魚片,待魚片燙熟後瀝乾撈起。
  5. 將煮熟的魚片、松子、芝麻油及歐芹拌勻,試試味道,也許需要再加些鹽和葫椒粉,即可上菜

Directions:

  1. Prepare your parsley before your fish.
  2. Toast pine nuts at 350 (170 ) for 6 minutes.
  3. Bring a pot of water to boil. Add some salt.
  4. Dry your fillets with a kitchen paper towel, sliced, evenly sprinkle with salt and white pepper, even and lightly wrapped in starch.
  5. Cook the fish in boiling salty water until it is done.
  6. Combine the cooked fish, pine nuts, sesame oil and parsley and mix well, try the taste, maybe you need to add salt and pepper before serve.
